INGREDIENTS LIST
Plant Provisions Smokehouse Slices
slices sourdough bread
2 slices vegan cheese, of choice
1 tablespoon vegan butter
1⁄2 cup green cabbage, thinly sliced
1 carrot, peeled into thin strips
2 green onions, finely diced
1⁄2 cup extra-virgin olive oil
2 tablespoons dijon mustard
2 tablespoons white wine vinegar
2 tablespoons fresh tarragon, chopped
1⁄4 teaspoon salt, more to taste
1 teaspoon sugar
DIRECTIONS
Make the tarragon schmear.
In a small bowl combine olive oil, dijon mustard, vinegar,
tarragon, salt, and sugar. Beat this mixture well with a whisk to blend and emulsify. It is
emulsified once the sauce is creamy and holds together without separating.
In a separate bowl add cabbage, carrots, and green onions and toss with 2 teaspoons of
tarragon schmear.
Heat a skillet over medium heat with vegan butter and build your sandwich while heating
up.
Build your sandwich.
Spread both halves of sourdough with some tarragon schmear
and mound your slaw on the bottom half. Then top with copious amounts of Plant
Provisions Smokehouse slices and then the vegan cheese and place the second piece
of sourdough on top.
Add the sandwich to the hot pan to just gently warm your sandwich up. Cook for 1
minute and then flip and cook for an additional 1-2 minutes. Remove from heat and slice
in half and serve right away.
