INGREDIENTS LIST

Sesame Bagel, toasted
2 teaspoons vegan butter
Plant Provisions Chipotle Chili Slices
1 “Just Egg” omelet, folded
1⁄3 cup arugula
1 green onion, thinly sliced
2 tablespoons minced dried onion
1 tablespoons minced dried garlic
1⁄2 cup dried chili flakes
1⁄2 cup Gochugaru Korean chili flakes
1 tablespoon sugar
1⁄2 teaspoon salt
1 cinnamon stick
3 tablespoons soy sauce, light if available
1 1⁄2 cups neutral cooking oil, such as avocado

DIRECTIONS

-Make the chili oil -

Place the oil in a tall saucepan and heat to 360F. To a large heatproof bowl, add the dried onion, dried garlic, and both types of chili flakes. Then add sugar, salt, cinnamon stick, and soy sauce. Carefully pour the hot oil over the dried ingredients. The oil will bubble and scald so be extra careful. Stir the ingredients together with the hot oil until you are able to see the dried chili flakes. Once the oil cools, the chili flakes will settle at the bottom and you will get a layer of oil on top. Store in a jar for future use or use right away!

-Prep the sandwich-

In a small bowl, toss together the arugula and green onions with 1⁄2 teaspoon chili oil.
Spread 1 teaspoon of vegan butter over both halves of the hot toasted sesame bagel.


On the bottom half add the green mixture and top with the Just Egg Omelet and slicesgalore of Plant Provisions Chipotle Chili Slices and drizzle a little additional chili oil on top if you like it extra spicy. Top with the other half of the bagel and enjoy!
