HERBED TUSCAN SALAD
7 ounces butter lettuce, or any crisp green of choice
Plant Provisions Tuscan Slices, cut into small triangles
3⁄4 cup cannellini beans, drained and rinsed
3 tablespoons banana peppers, from a jar
3 tablespoons cornichons, diced
1⁄2 cup dairy free feta cheese
1⁄2 cup extra virgin olive oil
1⁄2 cup apple cider vinegar
2 teaspoons honey, more to taste
2 tablespoons lemon juice
2 garlic cloves, minced
2 tablespoons Za’atar
Salt and pepper, to taste
To a large bowl add greens, Plant Provisions Tuscan Slices, cannellini beans, banana peppers, cornichons, and dairy free feta cheese.
In a mason jar add olive oil, vinegar, honey, lemon juice, garlic, Za’atar, and salt and pepper. Cover and shake until emulsified or whisk together. The dressing makes 1 cup. Store any leftovers in the fridge.
Drizzle Za’atar dressing over salad and toss to combine!
